To turn-off/remove question numbers go to Style > Text > Text Options and uncheck the option to Show Question Numbers. This will turn off question numbers in your live survey link.
The Build tab will always show question numbers regardless of whether question numbering is turned off in the Style tab. To double-check your number is turned off, take a quick peek at Preview, Style, or the live survey link!

@Peter: Thank you so much for reaching out to our help page!
The ability to turn off question numbering is available on paid accounts. Regrettably, free users do not have access to this feature.
I hope this helps clarify!

there doesn't seem to be an option for show question number under text options. This is even though the above article shows that there is.

@Philanthropy: I'm afraid that this looks to be a result of a glitch.
Refreshing the page will apply the correct numbering to the Essay question(s). This is something that has been reported to our Development team.
I'm sorry for the trouble and hope this workaround helps!

When I am building a survey with various question types, I noticed that if I add an essay type option, those questions are not numbered chronologically with the rest of the survey. For example, if I make the 8th question an essay field type, it will actually be labelled #1, then the following questions will go back to chronological (9, 10, so on...) and the next essay type question will be labelled #2. Why is this?
