Yes, what you have suggested is a safe practice as the fields are able to store any data that is mapped to them. Like you said, the key is to keep track of which fields hold which information.
You might also consider looking into Custom Contact Fields within Email Lists. When using email lists, you are able to create your own custom fields if the available fields are not suitable for your needs:

If we are limited in the amount of custom fields that are available (10), would it be a safe practice to use any of the developed fields for our additional custom needs (i.e. as long as we're keeping track that "Group" now equals a custom field of "Hat Size", for example).
